Dinner tonight was scrumptious. I tried a recipe titled Superfood Salad with Lemon Vinaigrette, and it blew my socks off. My boyfriend’s socks are off as well. It’s from a super cool blog called Iowa Girl Eats. The recipe looked good & healthy, and I really didn’t think it was going to be THIS good. Here is my experience in pictures:
I used all the SUPERFOOD ingredients except for pomegranates, because sadly, pomegranate season has gone
You just can’t go wrong with quinoa, black beans, red onions, corn, oranges, avocado, and cilantro!
Used Santa Maria Seasoning for the shrimp. This seasoning is one of my favorites for seafood & chicken!
